Here’s a shortcut + meal-prep-friendly version of Rooster & Rice-style Khao Man Gai that keeps the flavor but saves time and dishes. It’s perfect for cooking in bulk and storing for the week.

  • 2 tbsp water

  1. Cook Chicken (3 ways):
    • Stovetop: Sear thighs in a skillet 5–6 min per side, until cooked through.
    • Oven: Bake at 400°F (200°C) for ~20–22 min.
    • Instant Pot: Pressure cook with ½ cup broth on high for 8–10 minutes.
  2. Make Rice:
    • Use rice cooker or stovetop. Add rice, broth, butter/oil, garlic and ginger powder.
    • Cook as normal (rice cooker) or bring to boil, then simmer 15 minutes.
  3. Blend Sauce:
    • Whisk or blend all ingredients. Adjust sweetness or saltiness to taste.
  4. Assemble Meal Prep Bowls:
    • Add rice, sliced chicken, cucumber slices, and a small container of sauce.
    • Optionally include a container of broth or miso soup to reheat separately.
  5. Store:
    • Refrigerate up to 4 days.
