Ingredients:
For the Chicken:
- 4 boneless, skin-on chicken thighs (or bone-in for more flavor)
- 1 inch of ginger, sliced
- 3–4 garlic cloves, smashed
- 1 tsp salt
- 4 cups water
For the Rice:
- 2 cups jasmine rice, rinsed
- 2 tbsp chicken fat (or vegetable oil)
- 2–3 garlic cloves, minced
- 1 tbsp ginger, minced
- 2 cups chicken broth (use the poaching liquid)
For the Sauce (the real star):
- 2 tbsp fermented soybeans (or miso paste as a substitute)
- 1 tbsp soy sauce
- 1 tbsp dark soy sauce (for color, optional)
- 1 tbsp vinegar (white or rice ; DO NOT use red or dark vinegar)
- 1 tbsp sugar
- 2 tbsp fresh ginger, finely minced
- 3–4 garlic cloves, minced
- 1–2 Thai chilies, minced (optional, for heat)
- 2 tbsp water (to loosen the sauce)
- Juice of ½ a lime (1.5 TBS)
For Garnish & Sides:
- Cucumber slices
- Fresh cilantro
- Clear broth (reserved from chicken pot)
- Sriracha (optional)
🔪 Instructions:
1. Poach the Chicken:
- Add 4 pieces of skin’d chicken, 1 TBS ginger, 4 garlic cloves, and 1 TSP salt to a pot of water.
- Bring to a gentle boil, then reduce to a simmer and cook 25–30 min, until chicken is fully cooked.
- Remove chicken and let rest. Strain and save the broth for rice and soup.
2. Make the Rice:
- In a pan, heat chicken fat/oil. Add garlic and ginger; sauté 1–2 min until fragrant.
- Add rinsed rice and stir to coat.
- Add 2 cups of the reserved chicken broth. Bring to a boil, cover, then reduce to low and cook for 15 min. Let sit 5 min before fluffing.
3. Make the Sauce:
- In a bowl, mix all sauce ingredients. Adjust consistency with water and balance with sugar/lime juice to taste. It should be salty, tangy, and garlicky.
4. Serve:
- Slice chicken and place over the rice.
- Add cucumber slices and a bowl of the clear chicken broth.
- Spoon the sauce generously over the chicken or serve it on the side.

- For extra authenticity, render chicken skin to get chicken fat for the rice.
- You can prepare the sauce ahead—it gets better as it sits.
